Homemade Energy Bites

Today is just a little quick something to temp your taste buds
As we have a busy day ahead…
Job Interview for this Mama & then
Gran-Wen & Grandpa are back in town so we will be meeting them for dinner. Cash is very excited!

I”m still being stingy with wedding photos for now. 
It seems there are just too many great ones to pick favorites so everyone will have to wait a little longer.  But if you follow me on Facebook or Instagram then you’e seen a few 🙂 Eventually we’ll get there.  Hey next Monday is our 1 month anniversary, who knows maybe that will be a good day to share! 
For today I would love to share with you one of our wedding favors. 
We actually had two favors 
-did our pretty terrible “planner” forget to put one of them out? yes. 
-was I furious the next day when I realized? yes!
But after the fact what can you do? Not give that lady a recommendation that’s for sure. 
But more on that later. In the grand scheme of things she was minor. 
Brad and I each did a favor. And both of them turned out great. 
He & the groomsman brewed and bottled beer that was a take home gift. Although the beer was brewed a couple months before the wedding they actually had to drive it to Washington with them and bottle it on Friday night after our rehearsal dinner. Very entertaining way to spend the night before the wedding, and much thanks to my girls for labeling all of those bottles!
The girls & I made a little treat bag for each persons place setting, filled with delicious little balls otherwise known as energy bites. The week before my Matron of Honor & her sister came to my moms and we made over 350 of these little bites in one night. They can be stored in the freezer for quite a long time but we were going for as fresh as we could. Thursday before the wedding we packaged them up into little muslin bags, that were stamped with a J and tied a tag labeled “Energize the Night” and the recipe. 
(seriously I can’t seem to find even 1 picture of them! Ahh oh well)

I think we managed to paint a pretty neat picture of us between the two favors. Crafty, healthy, a little alcohol and D.I.Y. that just screams Brad & I haha. 
Since our big day, energy bites have become the number one request in my house. The hubby loves them, so I’ve made a couple batches for our freezer, which he quickly eats 🙂 
In fact it’s that time to make some more. Better put it on my to-do list this week! 
They are pretty simple to make. 
The hardest part is actually rolling them into tiny balls 
(hey if we can manage over 350 you should be able to knock out 50 of them no problem!).
Here you have it. 
Homemade Energy Bites
Recipe from Money Saving Mom
Original recipe from Smashed Peas and Carrots
Completely Modified by Me!
2 cups Oatmeal
1 cup peanut butter or other nut butter (we used Almond Butter)
2/3 cup Honey
2 cup coconut flakes, wheat germ, sesame seeds, or a mixture of all three 
(so we used 1 cup vanilla protein powder & 1 cup coconut)
1 cup ground flaxseed
1 cup dark chocolate chips (or mini chips)
2 teaspoons Vanilla

Mix all ingredients together. Roll into balls.
To freeze: Place balls on a cookie sheet and freeze for one to two hours. Remove from cookie sheet and place in an airtight ziptop freezer bag (or other airtight container).
To serve:Remove desired number of balls and thaw at room temperature for 15 to 30 minutes. Can also warm for 30 seconds or so in the microwave. Or, you can be impatient like my husband and eat them straight from the freezer. 
Makes around 3 dozen energy bites. (so it says. We got more like 50 out of a batch)

Luckily we did manager to get the beer favors out for those that lasted thru much of the dancing – and I just so happen to have a few of the left overs stashed in my closet… : ) in fact I have a few of the energy bites stashed in my freezer and yes they are great! I have to say you thought of many little details I've neber seen before… now about those pictures!! we need to talk LOL
