Auntie Jacko’s Here & 5 Ingredient Fig Bites

How’s yours going? Over here it’s a blast.
With my cousin visiting it’s full of even more craziness than normal and we’re loving every minute of it!

I don’t think Cash is going to let her leave. Or my husband as we’ve been getting down in the kitchen with food experiments. His belly is so happy to have 2 creative kitchen minds working together. Pretty sure it will take me a few weeks to actually type up posts on all that we’ve done but eventually I’ll share them all. Even the not so great ones… haha.
Since I have a quick hour I wanted to share with you a super easy snack recipe
(along with the cute snapshots you already saw ^^^)

These are another No-Bake Ball similar to the Homemade Energy Bites that I made for our wedding. Such a yummy and healthy snack. These are Gluten Free, Vegan & Paleo. The big plus is compared to the energy bites they’re even Easier. Yep that’s possible… just keep reading.

5 Ingredient No-Bake Fig Newton Bites

Prep Time: 10 minutes
Servings: }depends on the size you make them} I got 36 balls
Serving Size: 2

Ingredients
3 C dried figs- hard stems removed
1 C walnut halves
1/4 C flax seed meal
1 Tbsp pure vanilla extract
1/2 tsp salt

Directions

1. Place all 5 ingredients into a large food processor and pulse until finely chopped. It will be almost the consistency of sand. Can take up to 5 minutes. Remove the blade and set it aside.
2. Scoop out small bits of mixture  and form into balls by rolling in between your hands.
3. Enjoy them at room temperature or refrigerate in a tupperware container for up to 7 days.

See, they really are super easy!! And delicious! Dried Figs weren’t too hard for me to find I just went to Trader Joes. I plan to check out Sprouts and Whole Foods to compare prices for the next time I make them. Which I’m sure will be very soon. Give it a try and let me know what you think!! Enjoy!
