Wild Orange Essential Oil Power dessert bites (i.e. protein balls)

I am loving all of the recipes that I’ve been able to try out recently while doing this detox-cleanse.
It’s nice to change things up in the kitchen and be able to experiment with new (to me) ingredients. I can’t say that it’s been particularly easy to cut out bread, cheese, white sugar but for the most part I’m doing well. I did have to have 1 M&M today since Cash saw me go potty and made sure I was rewarded lol. The recipe I’m going to share with you today is gooey, delicious and worth the 15 minutes it takes to throw all these ingredients into a bowl and roll them into yummy bite size balls. I made a double batch and {to let you in on a secret} I also store mine in the freezer. That way they keep a little longer and they’re a more solid consistency, did I mention these are a bit gooey and way yummy.

Wild Orange EO Power Dessert Bites

Yield: approx 10-15 balls depending on size
Prep Time: 15 minutes

Ingredients

1 C finely shredded coconut (I used unsweetened)
1 C almond butter
1 C dried cranberries
1/2 C chopped dates
1/2 C raw honey (play with this amount to make them taste how you want)
1/2 tsp Sea Salt
2 TBSP Chia Seeds
3-5 drops of Wild Orange essential oil

Original Directions
Put everything in your mixer & mix up. Add things & replace things to make yummy variations.

My Take: Put dates, cranberries (since I doubled the recipe I also added a cup of dried blueberry/cherry mix) into food processor & chop up. Transfer to a large mixing bowl. Add all other ingredients and mix until well combined. Then roll into bite size balls, they’ll be gooey so place in freezer for 10 minutes until hardened. Put them all into tupperware and back into the freezer. When you’re ready to eat take out 2-3 (or 5) and let sit for a couple minutes to soften. Then Enjoy. Honestly, I don’t mind eating them right out of the freezer.
