Spaghetti Squash

It’s official people.
We have found a new favorite side dish / main dish / carb / meal. HA
You name it we want this stuff in whatever form, at every meal. I’m sure at some point we will get sick of it but for now it’s a huge hit in our house. Who knew how great spaghetti squash tasted? Or how easy it was to cook for that matter! I certainly had no idea… And what perfect timing with squash being in season for the fall. Also it’s low calorie for those of you trying not to gain too many of those holiday pounds. I know that so many people have blogged about it that the craze is getting crazy. But just in case you weren’t sure…. Go Buy Some! And try it for yourself. 
The possibilities are endless with this stuff and it’s so good for you on top of it! 
I mean one cup is only 31 (to 40 depending on prep) calories, 7 carbs and it’s chalk full of vitamin A, B6, C, K, Potassium & more!
How could you not love it?
We have been using it as a pasta subsitute. Not that we really eat pasta around here, but with it being “fall” {hey it’s Arizona it doesn’t really feel like fall, remember we just went to the pool on the 1st of this month}. Still we are definitely craving hearty-er meals. 
Don’t let the pictures scare you. It’s super easy to make.
I bake it in the oven (usually while we’re doing something else). 

Step 1: Cut off ends of squash (you’re gonna need a really sharp knife, this stuff is tough)

Step 2: Cut squash lengthwise making two even halves. (make sure your oven is preheated too)

 Step 3: Scrape out all the seeds and pulp with a spoon (just like a pumpkin people) Super easy.

Step 4 (optional): lightly baste with olive oil and sprinkle with pepper (salt if you want, i don’t use it)

Step 5: turn face down on baking sheet lined with foil if you’re a neat freak like me 🙂

Step 6: Bake in oven at 375 for 45 minutes

Step 7: Flip over and use fork to scrap out squash, it will be stringy like spaghetti (Careful it’s hot!)

Step 8: Dump into bowl (or on plates) and serve! 
At this point you can top it with whatever you’d like. Like I mentioned endless possibilities. 
Cheese, Pesto, Bolognese, Alfredo, 
Shrimp, Chicken, Turkey, Salmon, Beef
Get Creative people! 
I recently found someone who carves out the shells, puts the squash back into them, tosses it with cheese and puts it back into the oven to bake so the cheese gets gooey & melty. Yum. {totally not diet friendly sorry bout that, oh well} There are plenty of options for healthy and not so healthy out there.

  1. Another great post…about Squash! I love how you shine through in your writing style, it is just so you! I discovered this gem of a vegetable years ago, love it and yet HATE every other variety of squash. Somewhere I have a recipe that you prepared in the microwave( so quick) and then after it was done you put it in a pie plate with a little salt, pepper, butter, and brown sugar, and into the oven at a pretty high temp so that it formed a crispy crust on top. Tasty for sure! Enjoy your Thanksgiving with your family Jen, you have so much to be thankful for! I am thankful for the gift of you! XO
