Sugar Free Apple Crisp

How about a new recipe to add to your box/list/stack at home to try!! I seriously have a problem there are mountains, stacks, piles of recipes that I can’t wait to try out on my family. I’m sure I’m not alone in this right people? Raise your hand if you have a food addiction lol. It’s even more fun when they’re both healthy & delicious all in one. My husband has a few hundred favorite desserts. But one that’s on the top of his list is apple crisp. It’s so delicious warm right from the oven and even his favorite way cold from the fridge in the morning lol. Being that he gave up processed sugar for Lent it’s been a super fun challenge for me to adapt recipes and find new stuff for us to eat. {Cauliflower tortillas were a super fail. It really wasn’t pretty but they tasted good. Hoping round two of those is better so I can actually post about them.} But back to the apple crisp. For this recipe I adapted about 3 different versions and a few different times of trial and error. It seems we’ve reached “perfection”! {hey both boys love it so I’m happy too}. The thing with this is we (Brad lol) are not normal in the ratio of crisp to apples. It seems wehe likes to have about 3x the amount of crisp that a actual recipe calls for. So this is certainly not exact but I give you the ingredients below. Followed by the amounts for 1x (crisp) in the directions. You feel free to double or triple or even quadruple as you’d like to. But I definitely recommend doubling!

Ingredients
Green Apples Stevia Cinnamon Nutmeg salt quick oats wheat flour (or coconut or almond) vanilla coconut palm sugar (this is what I use instead of brown sugar) butter (coconut butter or coconut oil is what i use)
Directions:Grease glass baking dish (coconut oil or spray), preheat oven to 350. So you need about 6 green (or whatever ones you like) apples. cored and chopped into chunks. You can peel them but I save myself the work and keep the peel on for nutrients. Put them into a greased glass pan (8×8 or 9×13). And sprinkle with stevia and cinnamon to taste (a few TBSP of each works perfect). coat the apples and then leave it. In a large bowl mix : 1/2 c oats, 1/3 c flour, dash salt, dash nutmeg, 1/2 c coconut palm sugar, few drops vanilla, & 4 TBSP cold butter. Mix with fingertips to form clumps while blending & incorporating butter. (if you use oil a spoon works fine just make sure to break up palm sugar clumps) Sprinkle topping evenly over apples and bake in oven about 45min -hour. Cool & enjoy! (great with vanilla ice cream of course but we usually use Greek yogurt or whip up a coconut milk cream instead)
