It’s Friday!! Woo Hoo! Only 1 day until I’m off on a mini vacation to visit one of my very best friends and meet her sweet little new baby boy! Is my excitement coming through? Cause it should be jumping of your screen… Maybe I should add more exclamation points! 🙂
But as previously promised, I give you a new healthy & delicious recipe! These bad boys are yummy & pretty darn good for you! Happy Baking! Sorry there isn’t a picture… apparently I’m a terrible food blogger today. OOPS!
Chocolate Protein Pumpkin Muffins

Serves: 12 muffins {I double it so we have 24 for the week}
Ingredients:
1 3/4 cups old fashioned oats
1 cup canned pumpkin
1/2 cup applesauce1/2 cup plain low fat greek yogurt
3 egg whites (I doubled so I just used 3 whole eggs)
1/2 cup stevia
1/4 cup chocolate protein powder (this gives them the chocolate flavor)
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp pumpkin pie spiceA few drops of vanilla
Optional : Add in, Approx. 1/4 cup ground flaxseed, chopped nuts or choc chips
Directions:
1. Preheat your oven to 350. Spray muffin tin(s) with non-stick cooking spray
2. Mix all of the ingredients together. *if you’d prefer a smooth texture then toss it all (or just the oats) in a food processor or blender. We don’t mind the oats texture so I skipped this and went straight to mixing.
3. Divide the mixture among each of the tins (3/4 of the way full as this batter doesn’t rise much). Place into preheated oven. Bake for 15-20 minutes, or until the tops are a golden brown or nice and firm. *note: this makes a very moist batter, don’t worry if a toothpick doesn’t come out clean just make sure the tops are golden & firm.
4. Cool muffins on wire racks. Enjoy!

We’ve had a busy little day…
An early morning, Some fun at the pool, Lunch, Play time in the office and now it’s officially nap time before mommy has to head to work. Tomorrow will be an early morning for all, good thing I’m all packed. And only a lot little nervous leaving the boys for 5 days. {eek} I wouldn’t expect much blogging until next Thursday. I’ll be too busy snuggling a sweet baby boy! Who knows I may surprise everyone & blog at the airport. No promises though! No post is complete without this sweet face… boy am I gonna miss him over the next couple days.
