Seriously this is the easiest breakfast ever.
Even my toddler loves it. {most of the time}
Aside from grabbing and apple and a granola bar as you run out the door of course.
But who wants to do that?
I would much prefer something hearty with eggs, bacon (or sausage) and hash browns.
This includes almost all of those things.
Side Note: I recently found another breakfast recipe that includes all of the above, can be made in bulk & stored in the freezer so thats a huge win… can’t wait to share it when I finally get around to making it (probably in my nesting stage lets be honest).
For today you get a super easy casserole that includes 2 of the above. I first heard about this one (& tasted at her house) from my fabulous mother in law. She kept telling me it’s super easy… and behold it really is! You can change things up for your tastes, even make it harder to prep if you really want. Seriously the best part about this is you make it the night before. When you wake up just stick it in the oven right away so it cooks while you get ready to go or while you’re downing a few cups of coffee/changing diapers/waiting for Mickey Mouse to come on like me 😉
Simply prep for 10-20 minutes at night… and bake it at 350 for 30 in the morning. Easy Peasy!

OverNight Breakfast Casserole

Makes: One 9×13 casserole. I tend to halve the recipe & use and 8×8 pan since we only have 3 to feed.
Ingredients
1 pound breakfast sausage, turkey sausage, bacon, or breakfast meat of your choice
6 slices cubed bread (you can use whatever kind you want, even gluten free)
6 eggs (change it up and use 1/2 egg whites if your watching the calorie count)
1 1/2 C milk (again take your pick, I’ve made it with cows milk, almond milk & coconut milk)
1 cup finely shredded cheddar cheese
salt & pepper to taste
Directions
1. Fry your breakfast meat and chop into small pieces, drain.
Easy option: buy the brown & serve sausage and just cut it up no heating necessary.
2. Cube bread and put in a 9x13in pan. (make sure to spray the pan first for easy removal & clean up)
3. Toss in your breakfast meat.
4. In a separate bowl, lightly beat eggs then mix in milk, most of the cheese, salt and pepper.
5. Pour egg mixture over sausage and bread, make sure to coat all of the bread to get it moist.
Optional: sprinkle a little cheese over the top
6. Cover tightly and refrigerate overnight.
7. In the morning, put the pan right into your cold oven and set the temp for 350. Bake for 40 minutes until it’s golden and cheese is melty. *If you halved this and used a smaller pan only bake for 25-30.
